Easy PB Cookies

I love peanut butter cookies.  Especially when my mother makes them.  Especially when I'm standing by the oven waiting for the timer to go off so I can burn my mouth on a super hot, crumbly, fresh peanut butter cookie.

But, I don't like to cook.  Or bake.  Or do anything involving dishes in the kitchen...besides eat.

However, I found this recipe off The Struggling Cyster's blog and I'm in love.  I always have all the ingredients on hand and they take about two seconds.  Yes, that is my kind of cookie recipe.



I guess I'll share, but remember, I can't take credit.  Totally stole them from the Struggling Cyster, so if you love them half as much as I do, go tell her.

What you'll need:

1 cup peanut butter
1 cup sugar
1 egg

Preheat your oven to 350
Mix all ingredients together
Spoon them out onto a cookie sheet
Don't forget to mash then with a fork!  I might have done this once...it might have been gross.
Throw them in the oven for 8-12 minutes, depends on the oven.  Mine takes about 7 minutes.

Wait until they are cool to eat them.  Meghan included this little tip in her post and I didn't believe her...now I do.  They're much better when they have cooled down a bit.

oh those look so yummy! pb cookies take me back to my childhood because our mom used to make them and we got to help! crisscrossing w/the fork was my fave part! lol
